Majestic Meal, cont'd
CORNBREAD
Serves 4 to 5 people
1 cup of milk
½ stick of butter (don't use whipped butter)
2 large eggs
1 teaspoon of vanilla flavoring
Round cake pan
Large bowl
Dry ingredients:
1½ cup of all-purpose flour
1 cup cornmeal (yellow or white)
½ cup of sugar
2 teaspoons of baking soda
1 tablespoon of baking powder
1 teaspoon of salt
Preparation
1. Melt butter and mix with milk, eggs and vanilla in large bowl
2. To that mixture, gradually add your dry ingredients.
3. Stir the combined ingredients by hand. Batter should not be completely smooth. There
should be some lumps in the batter.
4. Grease the cake pan with butter.
5. Preheat oven to 350 degrees.
6. Pour batter in pan and let bake for 20-25 minutes or until golden brown.
7. Cornbread is done if you poke a toothpick in the center and it comes out clean.
8. Once cornbread is done, brush the top with butter.
Since any meat will do for Freeman, we suggest you take advantage of the summer weather
and prepare barbecued chicken. If you grill your chicken, it's best to parbake the chicken
for ½ hour before placing it on the grill. Parbaking will cut your grilling time
substantially. Potato or macaroni salad prepared to your liking will complete the meal
nicely.
